Rosemary Roasted Potatoes


These are my favourite potatoes!! I love rosemary and I have a weakness for potatoes. 

2 lbs mini potatoes
1 tbsp rosemary, chopped
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper

Preheat oven to 425 degrees

Put a large pot of water on to boil. Add salt. Put potatoes in and cook for 8 minutes. Drain. Place potatoes on a cookie sheet. Coat with olive oil and sprinkle with salt, pepper and rosemary. Roll around to coat. 

Bake for 20-25 minutes. Shake pan occasionally.
