Lemon Lime Poppy Seed Pancakes with Lemon Maple Syrup


I got up early one morning last week and decided to make the bf some pancakes. Unfortunately my kids don't eat breakfast despite my rantings about how important it is to eat in the morning so their brains are ready to learn... Anyways... The bf loves lemon poppy seed cake and I happened to see a post about it on Pinterest, so I thought I would experiment. They turned out great! The have a nice tang and just a hint of sweet. We ate these a few mornings in a row as I made a large batch. These also got eaten as a snack, cold (also very delicious)


Lemon Lime Poppy Seed Pancakes
2 cups of flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup sugar (or applesauce)
pinch salt
2 tbsp poppy seeds
zest of one lemon
zest of one lime
2 tbsp lemon/lime juice
2 cups buttermilk
2 eggs
2 tbsp melted butter, cooled

In a large bowl combine flour, baking powder, baking soda, sugar, salt, poppy seeds and zest. Whisk to combine.

In a small bowl or large measuring cup combine lemon.lime juice, buttermilk, eggs and butter. Stir until well mixed.

Add wet mix to dry and stir until just combined.

Cook in a non stick pan over medium heat, until tops bubble. Flip and cook 1 min more.

Serve with Lemon Maple Syrup

Lemon Maple Syrup
4 tbsp maple syrup
1 tbsp lemon juice (or more to suit your taste)

Combine together and mix well.

Chocolate Chip Banana Breakfast Cookies


These delicious bites are an awesome way to start the day! They are fairly healthy, soft and chewy and taste just like banana bread!!!


This is another recipe I found at Once a Month Mom. I made a double batch and divided them up and froze them. The kids love them and so do the adults. They do not last long at all.


1/2 cup butter
1 cup brown sugar
2 tsp vanilla
4 med ripe bananas
2 large eggs
1 1/2 cups flour
1 1/2 cups whole wheat flour
3 cups oats
4 tbsp ground flax seed
2 tsp salt
2 tsp baking soda
1 cup chocolate chips


Preheat oven to 350 degrees.


In a large bowl cream butter and sugar together until light and fluffy. add vanilla and eggs and stir until combined. 


In a medium bowl stir together flours, oats, ground flax, salt and baking soda.


Add flour mix into wet mix and stir until combined. Stir in chocolate chips. 


Spoon onto cookie sheets. I use 1 tbsp cookie scoop. 


Bake 8-10 minutes. 


**Note: These cookies will not flatten when baking they stay puffy.




To Freeze: cool and place into freezer bag or container. Place in freezer.


To Serve: let thaw before serving

Berry Breakfast Bars


I stumbled across this delicious breakfast and as you all may know I love breakfast foods. I love that this can be made the night before, as I do not have time in the mornings to make anything. I like my sleep and will not get up early! Early being before 7:45. I adapted this recipe from Dancing Veggies.

Dough
1 1/2 cups flour
1/2 cup sugar
2 tbsp brown sugar
3/4 cup cold butter
2 tbsp cold water
1 tsp salt

Filling
1/2 cup apple sauce (I only had strawberry kiwi flavour on hand)
1/2 cup brown sugar
1/2 cup flour
3 cups berries (I used strawberries, blueberries and raspberries)

Preheat oven to 350 degrees

Add flour, sugar, brown sugar, cold butter, and salt into a mixing bowl. Mix until dough begins to form. Add cold water enough just until dough is moist.

Press half the dough into the bottom of 9x13 pan. Bake 10 minutes and then let cool 10 minutes.

Combine applesauce, brown sugar and flour in a bowl. Toss in berries and stir gently. Spread over baked crust. Crumble remaining dough over the top.

Bake for 50-60 minutes.

Maple Brown Sugar Bacon Stuffed Waffles


Again I found something new to make for a weekend breakfast. The kids always ask me the night before if I know what I am going to make. I usually keep it a surprise as I often change my mind last minute. I spotted this recipe while looking through this weeks reveals on The Secret Recipe Club. Which I check every Monday. I almost contemplated making these for dinner this week. Thanks to Crystal at Mrs Happy Homemaker for posting this recipe and to Veronica from Veronica's Cornucopia who came up with this recipe.

This recipe has been adapted.

Maple Brown Sugar Bacon
10 strips of bacon
1/8 cup brown sugar
1/8 cup maple syrup

Cover a baking sheet with foil. Place rack on sheet and lay bacon on rack. 
Sprinkle bacon with brown sugar and maple syrup. Bake in upper 1/3 of oven for 10-15 min at 375 degrees (i used thick bacon so took 20 minutes). Remove from oven and transfer onto a cutting board (not paper towel it will stick). You can either chop the bacon or just cut the slices in half (which is what I did).


Waffle Batter
3 cups flour
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1/4 cup brown sugar
1/3 cup veg oil
1/3 cup plain yogurt
4 eggs
2 tsp vanilla
2 1/2 cups milk(or butter milk)

Preheat waffle maker.
Combine flour, baking powder, making soda and salt in a small bowl. 
In a large bowl combine brown sugar, vegetable oil, yogurt, eggs, vanilla and milk. Stir to combine. 
Add flour mixture and stir until just combined.

Pour batter into waffle maker and lay bacon strips on top. 
Cook waffles as per Waffle Maker instructions.

Serve with maple syrup.

Crispy Baked Breakfast Taquitos with Chili Lime Sauce


I was looking around for something easy for dinner tonight and these caught my eye while I was browsing this weeks reveals on Secret Recipe Club website. This recipe has been adapted from Prevention RD. I will definitely be making these again and look forward to experimenting with the filling flavours.

6 eggs
1/4 cup sour cream
1/4 tsp salt
1/8 tsp pepper
1/4 tsp garlic powder
3/4 cup shredded cheddar cheese
1/4 cup red/yellow peppers
1/4 cup diced onion
1 tsp hot sauce
6 10" flour tortillas

Chili Lime Sauce
3/4 cup sour cream
juice 1/2 lime
1/4 tsp chili powder
1/2 tsp salt

Preheat the oven to 425 degrees. Line a baking dish with foil and coat with cooking spray.

In a bowl, combine eggs, sour cream, salt, pepper and garlic powder. Stir to combine.

Heat a pan over medium heat. Melt a little butter and cook the onions and peppers for 5 min. Place in a bowl and set aside. Add a little more butter in the pan and add the egg mixture, using a rubber spatula scrap the bottom of the pan and flip over to cook the eggs. Once almost cooked pour into the bowl with the pepper and onions. Add cheese and hot sauce and stir to combine.


Place 1/3 cup of the mixture on each tortilla along one side and roll up tight. Place on the baking sheet seam side down. Spray tops with a little cooking spray and bake for 15 minutes.

While Taquitos are baking make the dip. Combine sour cream, lime juice, chili powder and salt and stir to combine.

After 15 min take the taquitos out of the oven and cut in half. Serve with the dip and some fruit on the side.

Avocado Tomatillo Chilaquiles


I LOVE Mexican food! So when I come across new recipes I always like to try them out. This one is a keeper. Thanks to Donna and Anne over at Apron Strings for this delicious and really easy recipe. 

I am always looking for new breakfast ideas as I have mentioned in the past many times. The others in the house were a little skeptical of this dish so they chose to have eggs and toast instead.


1 jar salsa verde
1 large avocado
8 cups broken tortilla chips (I used a mix of regular tortilla chips and Charras Chipotle Tostadas)
2 oz shredded Monterey Jack cheese
4 large eggs poached or however you like them (I prefer 2 eggs each so I doubled this part)

In a blender combine 1/2 salsa and the avocado and blend until smooth.  


Pour into a frying pan and add the remaining salsa. Heat over medium high heat. You want the sauce to have the consistency of a white sauce so you may need to add a little water to thin it out.

Add the tortillas ad stir to coat. Divide between 4 plates and top with cheese and eggs. Add a little diced tomato and cilantro if you like.

Birthday Cake Pancakes


A friend on my facebook posted a picture of Birthday cake Rice Crispy Squares, so when i went to find a recipe for them, I came across this recipe as well and had to make them. Thanks to Jessica at How Sweet It Is for posting this recipe! It was a hit!

1 1/2 cups flour
2/3 cup yellow cake mix
1 tbsp sugar
3/4 tsp baking powder
pinch salt
2 eggs
1 tsp vanilla
1 3/4 cups milk

Glaze
1 cup powdered sugar
1/2 tbsp milk
1/2 tsp vanilla

Combine flour, cake mix, sugar, baking powder and salt in a large bowl.

In a small bowl combine eggs, vanilla and milk.

Pour liquid mixture into flour and stir to combine. Stir in sprinkles if desired.


Preheat pan on medium heat. Pour batter into pan to the desired size you like. Cook until bubbles start to form in the middle of the pancake and then flip, cook 1 min more.


Serve with glaze and top with sprinkles. Enjoy!!!!

Eggnog Waffles


I like to change up breakfast on the weekends and came across this delicious recipe for Eggnog Waffles on Mrbreakfast.com and just had to try them. Luckily I even had some eggnog on hand so no trips to the grocery store needed.

I don't own a waffle maker but I was watching Jamie's Family Christmas and he made Waffles on a grill pan. So I decided to give it a try. It works really well and I don't need to buy a waffle maker! 





2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups eggnog (I used low fat)
1 egg
6 tbsp veg oil
1 cup pecans (optional but recommended)

Combine flour, baking powder, baking soda and salt in a large bowl. 

Combine eggnog, egg and oil in a bowl and whisk together.

Pour eggnog mixture into flour and stir to combine. Fold in nuts. 

You can you a waffle maker or a grill pan. I tried to make a giant waffle the size of the pan but I could not flip it and ended up cutting into 4 and then flipping. So I cooked the remaining in batches of 2.

Ouefs en Cocotte


So on my lazy weekend mornings, this is a breakfast I like to cook. It's easy and I can be creative with the flavorings and cheese. 

**You will need 2 ramekins per person and a baking dish to fit the ramekins.

2 eggs per person
salt and pepper

options:
Goat Cheese and Herbs
1 tbsp goat cheese
1/2 tsp herbs (I like chives and dill)

or 

Jalapeno Popper
1 tbsp cream cheese
1 tbsp cheddar cheese
roasted jalapeno (as much or as little as you like)

Preheat oven to 350. Butter ramekins. Place cheese and herbs and spices in the bottom. Crack an egg into each ramekin. Season with salt and pepper.

Place ramekins in baking dish in the oven. Pour boiling water into baking dish to about half way up ramekins. 
Bake for 20-25 min. To your desired doneness.

Carrot Cake Pancakes! with Cream Cheese Glaze!


So I was looking for something different for breakfast, I was getting sick of toast and cereal and came across this interesting recipe. They are amazing :)

Pancakes
1/2 cup pancakes
2 eggs
1/4 cup pumpkin puree
1/4 cup crushed pineapple
1/4 cup milk
1 tsp vanilla
2 tbsp raisins (optional, but recommended)
2/3 cup flour
1/2 tsp baking powder
1 tsp sugar
2 tsp cinnamon
1 tsp pumpkin pie spice
dash salt

Place carrots in a microwave safe bowl with 1 tbsp water, cover and heat for 1 1/2 min. Once cool enough to handle, add eggs, pumpkin, pineapple, milk, vanilla, raisins and 2 tbsp of water. Combine and set aside.

In a large bowl, combine remaining ingredients. Stir well and add wet mixture. Combine thoroughly.

Heat skillet in medium heat. Cook pancakes 2-3 min till bubbles form on top, flip and cook 1-2 min more. 




Cream Cheese Glaze
2 tsp powdered sugar
1/4 tsp vanilla
2 tbsp milk
2 tbsp cream cheese

Combine Sugar, vanilla, and milk in a microwave safe bowl. Add cream cheese and microwave 40 seconds. Stir until smooth. Serve over pancakes.
